Cooking Guru Ellie Krieger Joins #BingIt to Help You Make Healthy Holiday Dish Decisions

It’s November which means the holidays are already upon us! With Thanksgiving right around the corner, we’ll be hosting a #BingIt Twitter event with America’s favorite healthy cooking expert Ellie Krieger. Krieger is a Registered Dietician, New York Times’ best-selling author (her latest book “Comfort Food Fix” came out on October 17th) and host of “Healthy Appetite” on The Cooking Channel.


Ellie will be sharing tips for indulging in everyone’s favorite food holiday (without going overboard!) on Wednesday, November 2nd from 12-1pm PST. Just the aroma of this crisp baking is sure to give you a serious case of the warm-fuzzies – but that’s only a hint of the satisfying taste to come. Three kinds of apples give the warm-spiced filling a delicious complexity with soft, sweet, tart, and toothsome all mingling together. And the almonds, wheat germ and oats in the brown sugar-kissed topping provide a hearty toasted crunch.


1/3 cup old-fashioned rolled oats

¼ cup all-purpose flour

¼ cup whole-wheat pastry flour or whole-wheat flour

¼ cup sliced almonds

2 tablespoons toasted wheat germ

¼ cup packed dark brown sugar

¾ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1/8 teaspoon salt

1 tablespoon cold unsalted butter, cut into pieces

2 tablespoons canola oil

1 to 2 tablespoons cold water


3 large Rome or Empire apples (about 1 ½ pounds)

3 medium Golden Delicious apples (about 1 pound)

3 medium Granny Smith apples (about 1 pound)

¼ cup fresh lemon juice

3 tablespoons pure maple syrup

2 tablespoons all-purpose flour


1 cup Vanilla Cream Topping, optional

Preheat the oven to 375°F

To make the topping, place the oats, flours, almonds, wheat germ, brown sugar, cinnamon, nutmeg, and salt in a food processor and process until well combined. Add the butter and oil and pulse until lumps form. Add the water 1 tablespoon at a time until the dough just holds together when you press it between your fingers. Transfer to a bowl and using your fingers, press the dough to create several pea-size lumps for texture. Chill until ready to use.

To make the filling, leaving the peels on, core and cut the apples into ¼-inch thick wedges. Toss the wedges with the lemon juice and maple syrup until well coated. Sprinkle with flour and toss until well combined. Spoon the apple mixture into a 3- to 3 ½ quart shallow baking dish and sprinkle the dough evenly over the top. Bake in the middle of oven until bubbling, the apples are tender, and the topping is golden brown, 45-50 minutes. Serve with Vanilla Cream Topping, if desired.
